This summer I discovered Whole30 and it changed my life. It’s a reset for your digestive system that cuts out all grains, dairy, legumes, rice, corn, added sugar and alcohol – all “gut-disrupting” foods. While it’s incredibly rewarding, it’s also challenging, especially for the first couple weeks. In addition to withdrawals from “carb flu”, the biggest change for me was cutting out my delicious, fake, chemical-filled coffee creamer.
Eventually I got used to it and actually prefer black coffee now but every once in a while, I crave a summery coffee drink. So when I discovered this drink on my favorite Paleo Instagram account (@paleomg), I became obsessed. This may not be your traditional libations recipe but I have faith that you can doctor it up with Kahlúa or a flavored liqueur when the time is right.
PS: Starbucks will actually make this for you. Just order an “iced coffee blended with banana and coconut milk” – they may look at you funny and ask you to repeat yourself, but they’ll do it.
Ingredients – for one drink
- 1/2 cup of cold brew coffee
- 1 banana
- Splash of coconut milk
- Add all ingredients to blender. Liquify.
Note: feel free to tweak the serving sizes to your liking, e.g. use less coffee and more ice for a thicker frappe or add a dash of cocoa powder for a mocha flavor – go crazy!
